Mississippi Smoked Catfish Cakes

These fish cakes are made with catfish fillets that are seasoned and smoked. Add cayenne pepper, onions and Worcestershire sauce, shape into patties and fry in a skillet.
 

Ingredients

  • 4 pounds catfish fillets
  • 2 Tablespoons salt plus
  • 2 teaspoons
  • 1 Tablespoon cayenne
  • pepper plus 1
  • tablespoon
  • 1 medium yellow onion,
  • finely diced
  • 1 bunch green onions,
  • finely chopped
  • 3 Tablespoons
  • Worcestershire sauce
  • 2 eggs
  • 1/2 cup plain fine dry breadcrumbs
  • Butter

Method

Prepare charcoal grill for smoking. Line grill surface with aluminum foil and place catfish fillets on surface. Season fillets with the 2 tablespoons salt and 1 tablespoon cayenne pepper. Grill for 4 to 6 minutes per 1/2-inch thickness of fish. After fillets have cooked and cooled slightly, flake catfish into a bowl of a stand mixer. Combine remaining ingredients except for the butter in the mixer and mix on medium speed until combined. Form the mixture into bite-sized cakes and finish cooking on a griddle or in a nonstick skillet using small pats of butter. Remove cakes when they become golden brown on both sides. Serve with tarter sauce or remoulade sauce.

 

Notes: You may use any flavor smoking chips.
