
Plain yogurt is flavored with chili powder, sugar, salt and roasted brown mustard seed. Pieces of tomato, unpeeled cucumber, and onion are stirred in, and the mixture may be served with pita wedges or Indian naan.
Stir yogurt and chili powder well and set aside.
Cut onion, cucumber and tomatoes into small cubes. (They should look like colorful gems.) Mix yogurt, cubed onions, cucumbers and tomatoes, salt and sugar together.
In a frying pan which has been over medium heat, put the brown mustard seeds and watch them splutter and crackle. Remove as soon as the sounds die down and pour them into yogurt. Mix all ingredients together and serve.
Notes:
This crunchy Raita should taste both sweet and tart, so use your taste buds to bring that balance.
Again, Raitas can be eaten alone, or used as appetizing dips with triangle pitas (or naan). They are also great as an accompaniment to hot curries.
