North Carolina Vinegar Mop Sauce

BBQ Mop sauce for Pork Ribs or Chicken

  • Servings: 2-1/2 cups of sauce
  • Prep Time: 5 to 10 minutes
  • Cook Time: None
  • Total Time: 5 to 10 minutes


2 cups Cider Vinegar
3 Tbsp Ketchup
2 Tbsp Brown Sugar
4 tsp Coarse Salt
1 Tbsp Tabasco Sauce or Other Hot Sauce
1 tsp Hot Red Pepper Flakes, or to taste
Teaspoon Fresh Ground Black Pepper


Combine all the ingredients in a non-reactive mixing bowl and whisk until the salt and brown sugar dissolve. Taste for seasoning, adding hot pepper flakes as necessary.

Transfer the sauce to a clean (or even sterile) jar and store in the refrigerator. It will keep for several months.

Mop liberally on meat as it cooks over charcoal fire.


A common tool in any barbecue arsenal, the mop is used to baste meat while it's on the grill or smoker. The mop looks like a miniature floor mop, and is essentially a cotton-string head on a handle, so it's easy to make your own! An added bonus is having a removable head for easier washing.
