|1 cup||Whole Wheat Bread Crumbs|
|⅓ cup||Extra Virgin Olive Oil|
|¼ cup||Capers, drained and rinsed|
|3 Tbsp||Freshly Squeezed Lemon Juice|
|⅓ cup||Blanched Whole Almonds|
|1||Medium Potato, cooked and mashed|
|Freshly Ground White Pepper|
|Coarse Sea Salt, to taste|
Place bread crumbs, water and garlic in food processor then process until a smooth paste. With motor running, add oil slowly. Add 3 tablespoons capers and lemon juice. Add almonds and walnuts then pulse until coarsely ground. Place mixture into a medium container and fold in mashed potato. Season with pepper and add salt, if needed. Cover and refrigerate at least 2 hours. Before serving, sprinkle with remaining capers.
Recipe can be easily doubled.
