Oh Yum Hummus

This hummus uses lots of garlic, with lemon and cumin adding flavor. Serve with toasted pita chips.
Ingredients
- 2 (15 oz) cans garbonzo beans
- 1/2 cup sesame Tahini
- 4 cloves of garlic, halved
- 1/2 of a medium yellow sweet pepper
- 1 tsp ground cumin
- 1 Tbsp extra-virgin olive oil
- 2 Tbsp lime or lemon juice
- 1/4 tsp kosher salt
- Olive oil
- Paprika

Method
Drain beans and reserve the liquid. Add beans, tahini, garlic, yellow pepper, cumin, 1 tbsp olive oil, lime (or lemon) juice, and salt to a blender or food processor. Puree ingredients, adding reserved bean liquid as needed. Add enough bean liquid so the mixture is smooth but not runny. Place mixture in a serving dish. Make a small well in the center of the mixture with a spoon. Drizzle additional olive oil over the mixture and sprinkle with paprika.
Notes: The is best served with slices of toasted pita bread, wheat crackers or sliced veggies. The amount of garlic can be upped for the true garlic lovers.
