Olives And Sundried Tomatoes

Black olives are blended with sundried tomatoes, red onion, basil, parsley and garlic, and served on crackers.
 

Ingredients

  • 1 can of small black olives
  • 8 ounces of sundried tomatoes (oil pack)
  • 1/2 of a small red onion
  • About 20 leaves of fresh basil
  • Small handful of parsley
  • 4 cloves of garlic
  • About 2 ounces of extra-virgin olive oil
  • Salt and pepper to taste
  • Carckers or toasted bread

Method

Drain the can of olives and chop sundried tomatoes. Chop onion, garlic, basil and parsley. In a small electric chopper, blender or food processor, start adding olives and tomatoes. First, add half of the oil till you get a good pasty filling. Stop machine and add in all other ingredients, adding olive oil slowly while blending. May have to add more olive oil to get the right thickness--it should stick to spoon and not slide off too easily. Salt and pepper to taste. Serve either on a flavored thin cracker or some nice toasted Italian bread.
