Pastrami and Swiss Reuben Quiche

If you love the traditional Reuben sandwich, this quiche is for you. Add this dish to your brunch spread for some variety.
 

Ingredients

  • 1 refrigerated pie crust
  • 4 large eggs, beaten
  • 6 oz grated Swiss cheese
  • 1/2 cup cream
  • 1/2 cup Thousand Island dressing
  • 6 oz thinly sliced pastrami, chopped
  • 1 cup sauerkraut, well drained
 
Method

Preheat oven to 400. Fit crust into deep 9 inch pie plate. Crimp edges. Prick crust several times with fork. Bake 8 minutes and set aside. Combine next six ingredients in large bowl. Pour into crust and bake 45 minutes or until set. Let stand 10 minutes and slice into 8 slices. Serve warm. Drizzle with additional dressing if desired. Garnish with parsley and vegetables or fruit if desired.
