Peach and Cucumber Salsa

A tasty fresh fruit salsa made with peaches, cucumbers, jalapeno peppers and cilantro. Would be great with fish and grilled meat or poultry.
 

Ingredients

  • 3 large peaches, ripe but firm (peeled, pitted and finely diced)
  • 1 cup English cucumber, unpeeled and finely diced
  • 3/4 cup red bell pepper, seeded and finely diced
  • 1/3 cup fresh cilantro, finely chopped
  • 1 small jalapeno chile, seeded and finely chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons apricot preserves
  • (Salt, pepper and jalapenos should be adjusted to taste)
 
Method

Combine all ingredients in a medium bowl and stir to blend. Cover and refrigerate until needed. Stir before serving. May be prepared 2 - 3 hours in advance.

 

Notes: This low-fat, low-calorie salsa is good on everything.
