Peanut Chat

Raw Spanish peanuts are roasted in a skillet and combined with chopped onion, tomato, lemon juice, red pepper and cilantro for this colorful appetizer.
Ingredients
- 1 large red onion
- 1 small tomato
- 1 bunch of cilantro leaves
- 1 lb. raw Spanish peanuts
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp crushed red peeper
- 1/2 tsp vegetable oil

Wash and clean the cilantro leaves. Chop them thinly. Chop the onion and tomato. Heat vegetable oil in a pan. Add the peanuts and stir constantly, until you smell the roasted aroma. When peanuts are a darker brown, immediately remove from pan and pour them in a large bowl. When the peanuts have cooled off, add the onions, tomatoes, cilantro, lemon juice, red pepper, and salt, and mix together well. Serve. p.s. You may roast the peanuts ahead of time.
Notes: Peanut chat is wonderful as a snack with cold drinks, chilled beer, etc. Besides the delicious taste, there is a boost with the colorful presentation.
