This special appetizer will impress your guests--and it's so easy!
Preheat oven to 375 degrees. Cut Brie wheel in half to form two thin rounds, using unflavored dental floss or a sharp knife. Place one piece of Brie on a baking sheet, cut side up. Spread with pesto to cover; sprinkle with dried cranberries, 1/4 cup of the dried tomatoes and the toasted pine nuts. Top with the other piece of Brie, cut side down. Place in the oven for 10 to 15 minutes, or just till cheese is softened. Transfer to serving platter. Slightly remove 1 wedge for easier serving, and scatter remaining cranberries around the plate for garnish. Serve with bruschetta (toasted bread) or crackers.
Notes:
You can buy bruschetta or make your own, depending on your schedule.
