Picante Sauce

A versatile dipping sauce made with tomatoes, onion, jalepeno's and spices that is thickened and can be saved for later use.
 

Ingredients

  • 4 qts. peeled, chopped tomatoes
  • 2 c. chopped onion
  • 1 c. chopped fresh jalapenos
  • 1/2 c. vinegar
  • 1/8 c. sugar (or less)
  • 2 1/2 T. salt
  • 1/4 c. finely chopped garlic
  • 1/4 c. + cornstarch (mix with water)
  • 2 t. cumin
  • 2 t. oregeno
  • OPTIONAL:
  • 2 t. dry coriander (or 1/4 c. fresh cilantro)

Method

Combine vegetables and seasonings in large sauce pan. Dissolve cornstarch in enough water to make a paste. Stir into vegetable mix. Simmmer 45 minutes. Put into hot sterilized jars and top with hot lids. Turn upside down to seal if necessary.

 

Notes: Makes four quarts.
