Pizza Egg Rolls Italian Style

These egg rolls are easy to make and are a great appetizer or snack for the kids. Ground turkey and lots of veggies make these a healthier option.
Ingredients
- 1 tsp olive oil
- 1 tsp minced garlic
- 1/4 cup finely chopped carrots
- 1/4 cup finely chopped green peppers
- 4 oz lean ground beef, or use ground turkey, chicken or veal
- 1/2 pasta sauce
- 1/2 cup grated mozzarella cheese, or cheddar for more intense flavor
- 1 tbsp grated Parmesan cheese
- 9 5 1/2 inch square egg roll wrappers

Spray a skillet with vegetable spray and heat over medium heat. Add garlic, carrots and onions. Cook for about 8 minutes, or until softened and browned. Add peppers and cook for 2 minutes longer. Add meat, stirring to break it up and cook for another 2 minutes or until pink in color. Remove from heat and stir in pasta sauce, cheese and Parmesan cheeses. Keep rest of wrappers covered with a cloth to avoid drying. Place one wrapper on work surface with a corner pointing towards you. Put 2 tbsp filling in center. Fold corner facing you over filling to the middle, not the other edge, fold 2 side corners in over filling, rolling bundle away from you. Place on a baking sheet sprayed with vegetable spray and repeat with remaining wrappers until all are filled. Bake in preheated oven 425 degrees for 14 minutes, until browned, turning pizza rolls at halfway mark.
Notes: Kids devour these tasty little treats. Prepare these up to a day ahead and keep them refrigerated. Bake an extra 5 minutes. Can be frozen up to a month. You may want to double recipe. Note: You may want to wet the edges of the egg roll wrappers. It keeps the edges from drying out.
