Pizza Genovese

This pizza is light and fresh and is the perfect starter to any meal.
Ingredients
- Fresh pizza dough
- Basil pesto
- Mozzarella cheese
- 2-3 tomatoes, sliced
- 1/2 small potato, very thinly sliced
- Salt and pepper to taste

Method
Preheat oven with pizza stone on the lowest rack to 500 degrees F. Stretch pizza dough onto a cornmeal dusted board. Cover top of dough with pesto leaving a border for the crust. Next cover the pizza with mozzarella cheese. Layer sliced tomatoes on top of the cheese and then add some fresh basil. Then place the sliced potato on the pizza. Sprinkle with salt and pepper (and crushed red pepper if desired). Bake for 12 - 15 minutes based on desired level of crispiness.
