Potato Skins

Potatoes are cooked, halved lengthwise and scooped. The potato skins are filled with two cheeses, crumbled bacon, green onion and dill.
 

Ingredients

  • 3 large potatoes
  • 1/4 Cup Pepper Jack cheese, shredded
  • 1/3 C Mozzarella cheese, shredded
  • 4 slices crisp-cooked bacon, drained and crumbled
  • 1-2 T finely chopped green onions
  • Dillweed

Method

Bake potatoes in oven or microwave until tender. Mix cheeses. When potatoes are cool enough to handle, cut in half lengthwise. Scoop out most of the insides and reserve for another use. (Be sure to leave enough potato that the skins will stay somewhat rigid.) Divide cheese among potato halves and put in oven or microwave until cheese melts. Sprinkle with bacon, green onion and dill. Cut each piece in half or quarter to serve.
