Provolone, Roast Beef and Asparagus Roll-ups

Marinated asparagus spears are rolled inside slices of roast beef & provolone cheese, drizzled with dressing, and served on greens.
 

Ingredients

  • Asparagus Spears:
  • 24 thin asparagus spears (about 1/2 pound), cleaned and trimmed
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • Dressing:
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon olive oil
  • 4 teaspoons honey
  • 1/2 cup plain low-fat yogurt
  • 1/4 cup mayonnaise
  • 2 teaspoons prepared mild horseradish
  • Salt and pepper, to taste
  • (yields about 3/4 cup dressing)
  • Beef Roll-ups:
  • 16 thinly sliced pieces of smoked provolone cheese from deli
  • 8 thinly sliced pieces of roast beef from deli
  • Garnish:
  • 2 tablespoons finely chopped red bell pepper
  • 1 tablespoon chopped chives
  • 2 teaspoons olive oil
  • 1 tsp lemon juice
  • 2 cups fresh mixed greens
 
Method

To steam the asparagus, place it in a microwavable dish with the water. Cover and cook on high for 3 minutes. Drain and rinse under cold water to stop cooking process. Return spears to dish; sprinkle with lemon juice, olive oil, and salt & pepper to taste. Coat evenly and marinate in refrigerator until ready to use. To prepare the dressing, combine all ingredients--except salt and pepper--in a food processor or blender. Process until combined. Add salt and pepper to taste. Cover and chill until ready to use. To assemble roll-ups, place two pieces of cheese side by side on a cutting board. Lay the roast beef lengthwise on top of the cheese. Place three asparagus spears straight up and down at the left edge of the cheese and meat. Roll up the combo; secure with wooden picks, if necessary. Continue this process for all eight roll-ups. To make garnish, combine all ingredients except the greens. Serve roll-ups on the bed of greens, drizzle with dressing, sprinkle on the garnish, then season with salt and pepper, as desired.

 

Notes: These roll-ups make a wonderful appetizer or a first course salad.
