Pumpkin Cheddar Ball

This cheddar-cream cheese appetizer is shaped and decorated to resemble a pumpkin. It's flavored with dill weed and also has peanuts, carrots & red onion.

Ingredients:

• 2 cups shredded cheddar cheese
• 1 3 oz package softened cream cheese
• 1/2 cup chopped salted peanuts
• 1/2 cup finely shredded carrots
• 2 Tbsp minced red onion
• 1/8 tsp dried dill weed
• 1 green bell pepper strip (for pumpkin stem)

Method

Have cheddar cheese and cream cheese at room temperature. Combine cheeses in a mixing bowl, beating until well-blended. Stir in peanuts, carrots, onion and dill. Wrap and refrigerate about one hour. Shape into a pumpkin shape and refrigerate another hour. When chilled place a bell pepper strip into top of shaped pumpkin ball for stem. Place on a serving platter and surround with assorted crackers.

Notes: A yummy treat to be enjoyed after the hayride.
