Pumpkin Sweet Potato Walnut Pie


Can't decide between pumpkin or sweet potato pie for your special occasion? Combine the two and top it off with some walnuts. The double crust is the other secret to this great pie.



Ingredients:

  • 1 can pumpkin puree
  • 1 can yams in light syrup
  • 2 eggs
  • 2 ready made pie crusts
  • 1 tablespoon maple syrup
  • 1 tablespoon cinnamon
  • 1 bag crushed walnuts

Method

Preheat oven to 400 degrees. In a food processor, combine pumpkin, yams and eggs. Add maple syrup and cinnamon, then blend until batter is smooth. Place crust in a 9" pie plate. Place second crust over that for a double crust. Crimp edges and pour in batter. Sprinkle walnuts on top of pie and lower oven temperature to 350 degrees. Bake at 350 degrees for 1 hour.
