Queso Fundido

A classic Mexican appetizer--spicy chorizo sausage baked with cheese until bubbly. Serve with crisp tortilla chips.

  • Servings: 4

Ingredients:

1 Tbsp Olive Oil
1 Onion, julienned
4 cloves Garlic, finely minced
1 lb Ground Chorizo
1 Tbsp Chili Powder
1 cup Taco Sauce
2 cups Shredded Monterey Jack Cheese
2 cups Shredded Sharp White Cheddar Cheese
1 Large Tomato, seeded and chopped
½ cup Chopped Green Olives
Corn Tortilla Chips

Directions:

Preheat oven to 350 degrees. In a cast iron pan or oven proof pan, add olive oil and onion. Season with salt and pepper. Cook on medium, stirring often until caramelized, about 15 minutes. Add the garlic and chorizo, then continue cooking until chorizo is done, about 5 minutes. Discard any additional grease in pan. Add the chili powder and taco sauce, then simmer 15 minutes. Sprinkle both cheeses over top of meat mixture. Place in oven, on middle rack, and cook until cheese is bubbly and browned, about 10 minutes. Sprinkle tomato and olives over top and serve with chips.
