Rachel's Chicken Nuggets

Bite-size pieces of chicken breast are marinated for a few minutes in Italian dressing, then coated in a flour batter before skillet frying.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup Italian dressing
- 2 cups flour
- Canola oil

Method
Cut chicken into nugget-size bites and put in a medium bowl. Add salad dressing and let it marinate about 15 minutes. Add flour until chicken is completely coated. Fry nuggets in a skillet with a small amount of canola oil, about 4 minutes per side. Serve with rice, peas and carrots, and a salad.
Notes: My kids love these...they say they're better than McDonalds!
