Ingredients:
| 5½ | To-6 Pounds Chicken Wings, thawed and patted dry |
| Dry Spice Mixture: | |
| 4 Tbsp | Smoked Paprika |
| 2 Tbsp | Dry Mustard |
| 2 Tbsp | Granulated Sugar |
| 2 tsp | Roasted Cumin |
| 2 tsp | Salt |
| 1 tsp | Cayenne Pepper |
| ½ tsp | Black Pepper |
| Habanero Sauce: | |
| 1 cup | Butter |
| 2 Tbsp | Minced Habanero Peppers |
| 2 Tbsp | Minced Serrano Peppers |
| ½ cup | Tabasco Sauce or Other Hot Sauce |
| ½ cup | Asian Chili Garlic Sauce |
| ⅛ tsp | Ground Cinnamon |
| ½ tsp | Black Pepper |
| Blue Cheese Sauce: | |
| 1 cup | Sour Cream |
| 1 cup | Mayonnaise |
| 8 oz | Blue Cheese, crumbled |
| Other: | |
| 2 bunches | Celery, cut into sticks for dipping |
Directions:
Heat oven to 375 degrees. Line rimmed baking sheets or roasting pans with nonstick aluminum foil; set aside. Snip pointed wing tips off chicken wings and discard, or save to make chicken stock. Place wings in a large bowl or bowls, or into large resealable bags. Mix together all ingredients of dry spice mixture until combined, and toss with wings in bowl, or shake in bags until all wings are coated. Place coated wings, in one layer, on foil-lined baking pans. Bake for 30 minutes, turn wings, and bake another 20-30 minutes or until crispy. While wings are baking, prepare other sauces.
Habanero Sauce:
Melt butter in a large skillet over medium heat. Add minced peppers and cook, stirring, until peppers are softened, 2-3 minutes. Add all remaining habanero sauce ingredients to pepper mixture and stir to combine. Simmer for 3 minutes, cool slightly, then puree in blender or food processor. Return to pan, cover and keep warm.
Blue Cheese Sauce:
Place sour cream, mayonnaise and blue cheese in a food processor or blender, then blend until smooth. Place in a serving dish, cover with plastic wrap, and chill until serving time.
To serve wings, place hot crispy wings on a serving platter. Heat habanero sauce and pour into serving dish, then place by wings. Place blue cheese sauce by wings. Place celery sticks by sauces. Allow guests to dip wings in sauce or sauces, as desired. Wings can also be dipped into habanero sauce before serving.
