Ingredients:
| 1 Tbsp | Olive Oil |
| 1 lb | Red Onion, thinly sliced |
| 1 Tbsp | Fresh Thyme, chopped |
| Salt & Pepper, to taste | |
| 1 pkg | (10 Oz) Frozen Puff Pastry Shells |
| ½ cup | (2 Oz) Goat Cheese, crumbled |
Directions:
Heat the oil in a large, heavy saucepan. Add onions and cook over a gentle heat for 15-20 minutes or until softened, stirring occasionally to prevent them from browning. Add thyme and salt and pepper to taste. Cook for another 2 minutes. Remove from heat and let cool.
Preheat oven to 425 degrees F. Place puff pastry shells on a baking sheet and bake for 15 minutes. Take the shells out of the oven and remove the "lid." Divide the onions among the pastry shells and top with goat cheese. Bake for 5 minutes more until golden brown.
