Red peppers are sauteed with plenty of garlic, sun dried tomatoes, and basil to make for a zesty addition to cool goat cheese and French bread.

  • Servings: 3-4


½ cup Olive Oil
6-8 Large Red Peppers, cut into ½" sections
12 Large Garlic Cloves, cut into four strips each
2 Tbsp Balsamic Vinegar
1 Tbsp Sugar
Red Pepper Flakes, to taste
Salt & Pepper, to taste
3-5 Tbsp Finely Chopped Sun Dried Tomatoes In Oil
16 Whole Fresh Basil Leaves
12 oz Goat Cheese Log
1 French Baguette, sliced


Heat oil in large frying pan over medium heat. Add peppers and garlic and saute for 15 minutes. Stir in vinegar, sugar, red pepper flakes, salt, and pepper. Cook uncovered for 15 minutes. Stir in tomatoes and basil and simmer for 10 minutes. Serve with goat cheese and a French baguette.
