Restaurant-Style Spinach Con Queso

This lower-fat appetizer combines frozen spinach, Velveeta, cream cheese and salsa, plus a generous amount of ground red pepper in a crock pot.
Ingredients
- 1 package frozen chopped spinach, thawed
- 1 small block reduced-fat Velveeta cheese
- 1 jar mild salsa
- 1 8 oz package fat-free cream cheese
- 2 Tbsp cayenne pepper
- 1/2 cup shredded monterey jack cheese
- Tortilla chips

Method
Cube Velveeta and place in small Crockpot on low heat setting. Add cream cheese, spinach and salsa. Allow to melt together, stirring often once it is reduced to melted form. Once melted, add Cayenne pepper and stir well. Top with shredded Monterey jack cheese. Serve with tortilla chips.
Notes: Makes a very easy and tasty party dip!
