Roasted Feta in Olive Oil

Fresh bell peppers, garlic and onion are roasted with the feta and olive oil to perfection. Scoop this up with crusty French bread for a great appetizer.
 

Ingredients

  • 1 7 oz package feta cheese
  • 1 red or yellow bell pepper, sliced into thin strips
  • 1 white onion, quartered
  • 6-8 whole garlic cloves, papery skin removed
  • 4 sprigs fresh oregano
  • 1/2 cup olive oil
  • Juice of 1 lemon
  • 1/4 salt or to taste
  • 1/4 pepper or to taste
  • 1 loaf crusty French bread
 
Method

Preheat oven to 425 degrees. Place feta in the middle of a dish safe for broiling. Combine olive oil with peppers, onions, garlic, oregano and lemon juice to coat. Arrange olive oil and vegetable mixture around cheese. Sprinkle with salt and pepper then cook 15-20 minutes until feta and vegetables are soft. For added flavor, place under broiler for 2-3 minutes. Serve with crusty bread.
