Roasted Oysters


Fresh oysters steamed over a hot grill are great for your next backyard party.



Ingredients:

  • A sheet of tin cut 1 inch smaller than the size of the grill  
  • 2 dozen oysters  
  • A double thickness of burlap (large enough to cover oysters)  
  • A spray bottle (to mist burlap)  
  • Cocktail Sauce  
  • Melted butter  
  • Hot sauce  
  • Saltine crackers      

Method

Scrub the oysters clean with a stiff brush under running water. Place tin on grill over a hot fire. Arrange oysters in the shell so all are in contact with the sheet of tin, cover with burlap, mist burlap with water, and cook 7 to 9 minutes. Uncover oysters, and remove from grill with long-handled tongs. Open and serve with Cocktail Sauce, melted butter, hot sauce, and saltine crackers.

Notes: Note: If you substitute heavy-duty aluminium foil for the tin, reduce cooking time to 5 to 7 minutes, or until the shells pop open.
