Roasting brings out the sweet flavor of these fresh garden veggies--serve with toasted pita triangles.
Preheat oven to 400 degrees.
Combine the following:
Tomatoes cut into quarters, corn cut off the cob, onion chopped finely (pieces should be the size of the tomato pieces). Put veggies in a single layer in a roasting pan or baking dish. Drizzle with olive oil, salt and pepper to taste. Roast in the oven for 30 minutes or until tender. Serve with pitas, cut into wedges and toasted.
Notes:
For a little extra zing, butter the pita and sprinkle with parmesean cheese before toasting.
