Rob's Stuffed Mushrooms

Rob stuffs his mushrooms with sausage, bacon, two cheeses, garlic and onion. Make plenty of these because they will be the hit of your next event.
 

Ingredients

  • 2 lbs medium to large mushrooms
  • 1/2 lb pork sausage
  • 1 small onion, chopped finely
  • 1 clove garlic, minced
  • 1/4 lb pepperoni, chopped finely
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup shredded mozzarella
  • 1/4 cup Italian style bread crumbs
  • 1/4 cup shredded Parmesan
 
Method

Remove mushroom stems, chop and set aside.In a 10-inch skillet over medium heat, cook sausage until browned. Remove sausage allowing it to drain reserving 2 tablespoons of the drippings. Add stems to drippings and cook until tender. Add onion, garlic, pepperoni, and bacon. Cook about 3 minutes. Remove from heat and add in sausage, cheese and crumbs. Mix well. Fill mushroom caps with mixture and bake for 15 minutes.
