Salmon Pate

Salmon fillets are skinned, marinated, cooked and flaked, then combined with mayo and horseradish sauce to make this pate.
Ingredients
- 2 individual salmon fillets, skinned
- 1 tbsp olive oil
- Juice from 1/2 lemon
- 1/2 tsp. garlic powder
- 2 tsp black pepper, or to taste
- 1 tsp salt, or to taste
- 1 tbsp horseradish sauce
- 2 tbsp mayonnaise
- 1/4 cup chopped fresh parsley
- Whole wheat crackers
- Fresh vegetables, cut for dippers

Marinate salmon fillets in a mixture of oil, lemon juice, garlic powder, 1 tsp of the pepper, and 1/2 tsp of the salt. While marinating, heat saute pan or grill. Cook salmon 3-5 minutes per side, depending on thickness of fillet, until well done. Remove from heat and allow to cool to room temperature. Flake salmon into a large bowl, add horseradish, mayonaise, remaining salt and pepper and parsley. Stir to combine, then refrigerate. When cold, serve with crackers and vegetables for dipping.
Notes: Celery, fennel, and carrots work great as dippers for this hardy pate.
