Ingredients:
| 12 | Large Roma Tomatoes, seeded and finely chopped |
| 1 | Large Red Onion, finely chopped |
| 1 bunch | Cilantro, finely chopped leaves |
| 3 cloves | Garlic; Pressed, minced or very finely chopped |
| 6 | Serrano Chilies or 2 Jalapenos; Seeded, inner membrane removed and finely chopped, or to taste |
| 2 Tbsp | Extra Virgin Olive Oil |
| Juice From 1-2 Limes, to taste | |
| 3 | Medium Avocados; Peeled, seeded and small dice |
| 2 stalks | Celery, finely chopped |
| 1 | Sweet Red, green, yellow or orange bell pepper, finely chopped |
| Salt & Freshly Ground Black Pepper, to taste |
Directions:
Mix tomatoes, onions, cilantro, garlic, celery, sweet pepper, chilies, olive oil, lime juice and avocados together in a large nonreactive glass bowl. Adjust seasonings with salt and freshly ground black pepper.
Helpful Tips:
Let the flavors come together at room temperature for about 1 hour. Refrigerate for 12 hours if you want the flavors to blend further. Serve with chips, fish, and seafood or anything you like.
