|12||Large Roma Tomatoes, seeded and finely chopped|
|1||Large Red Onion, finely chopped|
|1 bunch||Cilantro, finely chopped leaves|
|3 cloves||Garlic; Pressed, minced or very finely chopped|
|6||Serrano Chilies or 2 Jalapenos; Seeded, inner membrane removed and finely chopped, or to taste|
|2 Tbsp||Extra Virgin Olive Oil|
|Juice From 1-2 Limes, to taste|
|3||Medium Avocados; Peeled, seeded and small dice|
|2 stalks||Celery, finely chopped|
|1||Sweet Red, green, yellow or orange bell pepper, finely chopped|
|Salt & Freshly Ground Black Pepper, to taste|
Mix tomatoes, onions, cilantro, garlic, celery, sweet pepper, chilies, olive oil, lime juice and avocados together in a large nonreactive glass bowl. Adjust seasonings with salt and freshly ground black pepper.
Let the flavors come together at room temperature for about 1 hour. Refrigerate for 12 hours if you want the flavors to blend further. Serve with chips, fish, and seafood or anything you like.
