Method

Cook breakfast sausage in a skillet over medium heat. Break up sausage into small pieces with a wooden spoon as you are cooking it; about 5-7 minutes. Drain on a paper towel and set aside. Then, in a mini-food chopper, combine the cream cheese and 4 ounces of salsa until smooth, about 15-20 seconds. Pour mixture into a mixing bowl and stir in next 3 ingredients. On a lightly floured surface, roll out 8 crescent rolls into 4 rectangles, measuring 6 x 9. Press out seam where triangles meet. Roll with rolling pin to make sure dough will hold together. Combine sausage with salsa mixture. Spread evenly over each rectangle, leaving about 1 inch on all borders. Start with the longer side and roll up, jellyroll style. Pinch seam closed and twist both ends to lock in filling. Wrap each log in a sheet of wax paper, twist ends, and refrigerate for at least 1 hour. Preheat oven to 400 degrees. With a sharp knife, slice each log into 20 pieces and bake on a non-stick cookie sheet or cookie sheet covered with non-stick aluminum foil. Bake for 12-15 minutes or until golden brown. Remove to cooling rack and let sit for at least 5 minutes. Combine remaining salsa with sour cream and use as a dipping sauce.

Notes: These are delicious and they make a lot. You can get at least 80 pinwheels and they make a great snack at any party, especially Mexican themed. Serve about 6-8 per person.
