Savory Spicy Sausage, Potato & Cheese Dip

Ingredients:
| 1 | Yellow Onion, diced |
| 1 Tbsp | Butter |
| 3 cups | Yukon Gold Potatoes, coarsely chopped |
| 10 | Links Breakfast Sausage |
| 2 cups | Chicken Broth |
| 2× 8 oz | Bricks of Cream Cheese, softened |
| 6 cloves | Garlic, crushed |
| 2 Tbsp | Hot Sauce |
| 2 Tbsp | Cilantro, coarsely chopped |
Directions:
In a medium saucepan, cook onion with butter on medium high heat until tender, about five to seven minutes. While onion is cooking, place potatoes in a large, microwave-safe bowl and cover with water. Microwave for 7-10 minutes on high or until potatoes are cooked. Drain. Microwave breakfast sausages on high heat, covered, on a microwave-safe plate until cooked through, about 3-5 minutes. Mince. Add cooked onions, potatoes and chicken broth to a blender. Cover and puree until smooth, about two minutes. Pour back into the saucepan, turn heat to medium and add the cream cheese in chunks. Cook, stirring frequently, until cheese is incorporated, about two to three minutes. Add sausage, garlic and hot sauce. When sauce bubbles, pour it into a large serving bowl and sprinkle with cilantro. Serve with crusty baguette rounds or hearty chips and crackers.
