This cheesy pastry is vegetarian and great as a snack, appetizer or side dish to any meal. It is of Middle Eastern origin and best paired with a meal of that nationality.
Mix all cheeses, 2 eggs, and parsley in a medium bowl. Carefully unfold dough and cover half of dough with a damp cloth. Take two sheets of remaining dough and place them on a cookie sheet. Brush with melted butter and repeat process until half of dough has been used. Carefully spread cheese mixture onto dough and continue layering remaining dough with butter. After all dough has been used, cut uncooked pastry into squares. Carefully brush with remaining butter whisked with 1 egg. Cook uncovered at 375 degrees until golden brown, about 30 minutes.
Notes:
This Middle Eastern pastry (usually called Buerek) can be served in a potluck as an appetizer, side dish, or even as the main dish. It is satisfying and delicious.
