Scallops Wrapped in Bacon

Sea scallops are wrapped in partially cooked bacon, then simmered in a mixture of teriyaki sauce, soy sauce, ginger, garlic powder and sesame seeds.
 

Ingredients

  • 12 Large sea scallops
  • 6 slices hickory-smoked bacon
  • 2/3 cup Teriyaki sauce
  • 2 Tbsp Soy sauce
  • 1/4 tsp ginger
  • Pinch garlic powder
  • 1 Tbsp. Sesame seeds
  • 1 Spring onion, finely chopped

Method

Place bacon strips on cutting board and cut the bacon in half. Fry bacon on one side until crisp; remove bacon and drain off the bacon fat. Pat scallops dry on both sides, then wrap the scallops with the crisp side of bacon on the inside. Secure with wooden picks. Place them in the frying pan, bacon-side down. In a small bowl mix teriyaki, soy, garlic and ginger; set aside. Turn stove on medium-high and fry the uncooked side of the bacon until crisp, turning them as they become crisp. Once the entire wrap is crisp, add sesame seeds to frying pan and cook until toasted, then add the spring onion and the sauce mixture. Decrease heat to medium and cook for 5 minutes. Lift the scallops in bacon to serving dish; garnish with fresh parsley and additional sesame seeds.

 

Notes: The recipe can be accomodated to serve more, if you would like; just increase the ingredients.
