Seafood Cheesecake Appetizer


This is an elegant appetizer and so easy to make. Serve with any bread or crackers.



Ingredients:

  • 1 1/4 cups Ritz crackers
  • 1 stick butter, melted
  • 2 (8 oz) packages cream cheese
  • 3 large eggs
  • 3/4 cup sour cream
  • 8 oz chopped shrimp (or crab meat)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 green onions, chopped (use white for recipe and green tops for garnish)
  • 1/4 cup sour cream for garnish
  • Variety crackers or party breads

Method

Preheat oven to 350 degrees. Combine crackers and butter in a food processor and pulse until mixed. Press the crumb mixture on bottom of a buttered 9 inch springform pan. Bake for 10 minutes. Combine cream cheese, eggs, and sour cream, and mix until smooth. Add shrimp, lemon juice, salt, pepper, and chopped onions, mix well. Pour this over baked crust. Bake for about 90 minutes or until top is lightly browned and center is set. Cool for 20 minutes. Loosen sides of pan but do not remove until completely cooled. Spread 1/4 cup sour cream on top and garnish with green onions. Chill. Serve with crackers or party breads.
