Shrimp and Pear Bites

Shrimp are cooked in coconut milk, hot sauce and curry powder then secured to a slice of pear with a toothpick. What a flavorful start to any meal.
 

Ingredients

  • 2 cups coconut milk
  • 1 lb jumbo shrimp, peeled and deveined
  • 1 tsp hot sauce
  • 1 tsp curry powder
  • Juice and zest of 1 lime
  • 2 ripe pears, peeled, cored and cut into wedges

Method

In a medium saucepan, simmer all ingredients except pears, until shrimp are pink, about 5 minutes. Cool and place shrimp on pear wedges then secure with toothpicks.
