Ingredients:
| 3 cups | Homemade Mashed Potatoes |
| 1 cup | Small Shrimp |
| 3 Tbsp | Extra Virgin Olive Oil |
| 2 | Eggs |
| 1 cup | Flour |
| 1 cup | Italian Style Bread Crumbs |
| Peanut Oil |
Directions:
Prepare homemade mashed potatos to liking, making sure they are firm. Chill for at least one hour. Meanwhile saute peeled shrimp in olive oil for 3 minutes. Cool completely, then add to mashed potatoes and stir well. Beat eggs in a bowl with a little milk. Place flour in another bowl, and bread crumbs in another bowl. Shape potato mix into meatball sized balls and dip into flour, then egg, then breadcrumbs. Firmly press bread crumbs into ball. Freeze balls for at least 10 minutes. Heat peanut oil and flash fry balls, until crunchy and heated through. Drain on paper towels.
Helpful Tips:
I make my potatos with butter no milk, Sometimes I'll add bacon bits, chives, sourcream and cheese-just make sure your pototos are firm, meaning just a litle sourcream and a little milk.
