Shrimp and Prosciutto

Toss shrimp in a sweet and sour sauce made of currant jelly, soy sauce, ginger, and lemon and then wrap each with prosciutto. It's a sweet, sour, and salty bite the guests will love.
 

Ingredients

  • 1/2 cup red currant jelly
  • 1 tsp soy sauce
  • 1 tsp minced fresh ginger
  • 2 green onions, minced
  • 1 clove garlic, minced
  • 1 tsp fresh lemon juice
  • 24 uncooked extra-large shrimp, peeled deveined
  • 24 thin slices prosciutto

Method

Preheat oven to 375 degrees F. In a medium non-reactive bowl mix the jelly, soy sauce, ginger, green onions, garlic and lemon juice. Add the shrimp and toss to coat. Wrap each shrimp with a slice of prosciutto. Put in a shallow baking pan and bake for 7 minutes or until shrimp turn opaque.

 

Notes: This is a kicked up sweet and sour sauce.
