Shrimp Dippers With Chili-cheese Fondue

Ingredients:
| 1 cup | White Wine |
| 8 oz | Grated Premium Yellow Cheddar Cheese |
| 8 oz | Grated Jarlsberg Cheese |
| 1½ Tbsp | Flour |
| 1-2 Tbsp | Hot Pepper Sauce |
| 2-3 tsp | Canned Chipotle Peppers In Adobe Sauce, optional |
| 2 | Green Bell Peppers, seeded, grilled or sauteed and cut into 1" pieces |
| 1½ | Dozen Large Shrimp, cleaned, and cooked or grilled |
Directions:
Heat wine to boiling and cook 2 minutes. Toss both cheeses with the flour. Reduce heat to low and gradually whisk cheese mixture into wine, stirring constantly until melted. Add hot sauce and the chipotle, if desired.
To serve, thread 1 piece of pepper on a wooden skewer or long toothpick, followed by 1 shrimp, then another piece of pepper. Repeat with remaining skewers. Serve with warm fondue mixture.

Helpful Tips:
Variation: Pineapple chunks may be added along with the shrimp and peppers.
