A mixture of beaten eggs, shrimp, green onion and almonds is micro-cooked, then rolled and sliced. It's served with a mixture of cocktail sauce and mayonnaise.
Whisk together the eggs, shrimp, onion, almonds and water till well blended. Grease an 8-inch round microwave-safe baking dish. Ladle half of the batter into the dish. Cook on high till the egg sheet is firm and dry, about 1 1/2 to 2 minutes.
Let cool slightly, then remove the sheet from the dish and roll up. Slice into 1-inch spirals and place on a platter. Repeat with the rest of the batter. Combine the remaining ingredients in a small bowl and place on the platter.
