Shrimp Puffs

These light puffs are filled with a cream cheese, mayonnaise and shrimp mixture for a great appetizer. You can serve them hot or cold.

Ingredients:

  • 1/2 C Margerine or Butter
  • 1/2 tsp salt
  • 1 C water
  • 4 eggs
  • 1 C Flour
  • Filling:
  • 8 oz. Cream Cheese
  • 1/2 to 3/4 C mayonnaise
  • 7 oz. can shrimp

Method

Boil water, margarine, and salt. Add flour, remove from heat and stir until balls form. Add eggs one at a time and stir - mixture will look like cookie dough. Drop in teaspoon sized lumps on greased coolie sheet. Bake at 400 degrees for 30 minutes. Remove from oven and prepare filling. Filling: Whip ingredients, seasoned to taste with seasoned salt, onion salt and garlic powder until smooth. Cut puffs in half, spoon in filling and fold shut. Serve immediately or chill in refrigerator.

Notes: Best if you use Hellman's Mayo.

Number of servings: 4-6
