Skinny Guacamole


Cannellini beans are with the mashed avocado, along with jalapeno, cilantro, onion, lime and tomatoes.



Ingredients:

  • 1 can (15 or 19 ounces) cannellini beans, drained and rinsed
  • 1 tablespoon lime juice (or to taste)
  • 1 ripe avocado, pitted
  • 1 jalapeno chili, seeded and cut up
  • 1/2 cup loosely packed fresh cilantro leaves
  • 1/4 cup coarsely chopped sweet onion
  • Salt
  • 2 Roma tomatoes

Method

In food processor or blender puree beans and lime juice; transfer to medium bowl. With spoon, scoop avocado into bowl with beans; mash with fork but leave some chunks. In same processor or blender, pulse jalapeno, cilantro, onion and salt until juicy and thick. Cut each tomato crosswise in half; squeeze to remove seeds and juice. Coarsely chop tomatoes and add to jalapeno-onion mixture. Stir this into beans-avocado mixture until combined. Serve right away.

Notes: Offer vegetable strips and/or baked tortilla chips as dippers. Family and friends can enjoy the taste of guacamole with almost half the calories.

Number of servings: Six to eight.
