A mixture of 3 kinds of cooked sausage, plus cream cheese, eggs, sauerkraut, & bread crumbs, is baked in small rounds for appetizers.

Ingredients

  • 1 lb of bulk hot sausage
  • 1 lb of bulk sweet sausage
  • 1 lb of bulk medium sausage
  • 1 8-oz pkg. Cream Cheese (Regular or Lite), Softened
  • 1 16 oz bag of (refrigerated) Sauerkraut
  • 2 to 4 cups of dry Italian-style Bread Crumbs
  • 9 Eggs, beaten

Method

Fry all of the sausage together in a pan, breaking it up into very small pieces. Drain and put into colander; rinse with hot tap water to remove fat. In a big bowl combine softened cream cheese, sauerkraut, sausage, eggs, and 2 cups of the bread crumbs. Mix all together; keep adding more bread crumbs until a mixture for shaping into balls is made. Form into 1-inch round balls; put into shallow baking pans and bake for 20-30 minutes at 350 degrees or until done.

Notes: This is a wonderful recipe that was liked by our whole family on New Year's Eve.

Number of Servings: 20 servings (about 100 balls)
