Smoked Shrimp Deviled Eggs

An elegant appetizer--smoked shrimp with Caribbean seasonings, served in a hard boiled egg.
 

Ingredients

  • 1 lb cleaned, deveined shrimp
  • 2 tbsp mild Caribbean curry powder
  • 1/2 cup mayonnaise
  • Finely chopped hot peppers
  • Paprika
  • Hard boiled eggs, peeled and halved--discard yolks

Method

Smoke cleaned shrimp with hickory wood on low heat, 170-190 degrees for one hour and check for doneness. When done let cool for a bit in fridge, add shrimp to a food processor with curry powder and mayonnaise--blend until smooth. Scoop into halved cooked egg shells and refrigerate 1 hour. Before serving, sprinkle paprika lightly over eggs.

 

Notes: The egg and smoke concoction can also be a dip if you use more of everything and add finely chopped cooked egg whites.
