This dip is full of flavor and is great on crackers, with vegetables, or on an English muffin.
Mix cheeses in medium bowl. Finely chop red onion, scallions, garlic and roasted red peppers. Mix into shredded cheeses. Add red wine vinegar, mayonnaise, liquid smoke, cayenne pepper, salt and black pepper. Refrigerate at least 4 hours for the flavors to blend before serving.
