So-Good Soda Apple-Ginger Dumplings

This apple dessert goes well with vanilla ice cream. The dumplings are filled with apple, the perfect amount of ginger and a splash of soda.
 

Ingredients

  • 2 granny smith or Fuji apples
  • 2 tsp grated ginger root
  • 2 cans refrigerated crescent rolls
  • 1 cup sugar
  • 1 cup butter
  • 1 teaspoon cinnamon
  • 1-12 oz can lemon-lime soda

Method

Peel, core and section apples into 8 pieces each. Open crescent rolls and place an apple section on small pointed end of dough. Sprinkle apple with 1/8 tsp ginger. Roll apple up in dough, sealing at end and edges. Place all 16 apple bundles in greased pan. Melt butter, add sugar and cinnamon. Pour over apples and then pour soda over apples. Bake at 350 degrees F for 40-45 minutes. Serve with vanilla ice cream
