SOPHISTICATED HOT WINGS with a sweet n' spicy marinade and smoked paprika dipping sauce

Purchased hot-style chicken wing sections are marinated in a mixture of red wine, chicken broth, garlic, smoked paprika, honey, and vinegar, then grilled. They are served with a dipping sauce of low-fat ranch dressing, sherry, smoked paprika and cilantro.
Ingredients
- FOR THE MARINADE
- Hot-style chicken drummets, thawed 1 bag (25-30 pieces)frozen
- Garlic cloves, crushed 6
- Dry red wine 1 1/2 cups
- Chicken broth 1/2 cup
- Smoked paprika 2 tsp.
- Honey 1 1/2 tbsp.
- Sherry vinegar 3 tbsp.
- Salt 2 tsp.
- Ground pepper 1 tbsp.
- Brown sugar 1/4 cup
- FOR THE DIPPING SAUCE
- Low-fat Ranch dressing 1 1/2 cups
- Dry sherry wine 2 tsp.
- Smoked paprika 1/2 tsp.
- Chopped cilantro 2 tsp.

Method
Combine the first 10 ingredients in a large bowl. Combine well, then divide into two ziplock bags. Refrigerate and marinate overnight. The next day, preheat a gas grill to HIGH heat. Drain the chicken drummets in a colander, then lightly coat with some olive oil. Sprinkle with a pinch of sea salt and grill the drummets, turning often for 6-7 minutes until firm and cooked through. While chicken cooks, stir remaining ingredients together. Serve drummets stacked on top of one another on a medium serving platter. Serve with the smoked paprika dipping sauce.
Notes: This recipe is basically hot wings for adults. The store-bought hot wings are marinated overnight. The marinade gives the already-spicey flavor an earthy sophistication from the wine and additional ingredients. Smoked paprika is used here. If it is not available in your area, regular will do fine.
