Sour Cream & Cheddar Cheesey Potatoes
|4-6||Medium/ Large Potatoes (use Whatever Type You Like Best!) That Are Peeled, sliced, and boiled|
|8 oz||Freshly Shredded Cheddar Cheese, or i used colby/jack. shredding it yourself is actually cheaper and makes a richer, creamier sauce!|
|½ stick||Butter, you can use margarine, but you're cheating yourself of the richness of the real deal!|
|½||& Onion, chopped very fine.|
|1 cup||Sour Cream, you can also use a plain greek yogurt!|
|Salt & Pepper To Taste. * I Also Put Some Garlic Powder In, but that's just me- i put garlic in just about everything! i also use sea salt and fresh cracked pepper, but again, that's just me.|
Preheat oven to 350 degrees.
Mix all the ingredients together. (I usually boil the potatoes earlier in the day when it's less hectic, then put it all together when I'm ready.) Put into a buttered casserole dish and bake, uncovered for 45 minutes. For browning purposes, depending on your oven, this can go for up to an additional 15 minutes as needed.
* a little crumbled bacon goes well in this dish, too!
