South Asian Mushrooms


Mushrooms with an Oriental flare--marinated in soy and fish sauce, rice wine vinegar, peanuts, lime and cilantro.



Ingredients:

  • 2 Tablespoons peanut oil
  • 20 ounces brown mushrooms, halved
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 cup plum wine
  • 1 Tablespoon soy sauce
  • 1 Tablespoon fish sauce
  • 1 Tablespoon rice wine vinegar
  • 1 Tablespoon fresh lime juice
  • 2 Tablespoons chopped peanuts, toasted
  • 1 Tablespoon fresh cilantro leaves, finely minced
  • Salt and freshly ground black pepper

Method

Heat peanut oil in a large skillet over medium-high heat. Add mushrooms to skillet and saute for 4 minutes, stirring occasionally. Add garlic and ginger and cook for 1 minute. Add plum wine, soy sauce, and fish sauce and cook until liquid has evaporated; remove from heat. When mushrooms have cooled to room temperature, combine mushrooms, rice wine vinegar, lime juice, peanuts, and cilantro in a medium mixing bowl. Mix well to combine. Season to taste with salt and pepper. Serve as an appetizer or side dish at room temperature or chilled.
