Southwest Spinach Dip

Cumin, salsa, and Monterey Jack cheese add a southwestern flavor to this spinach and cream cheese dip.
 

Ingredients

  • 1 pkg finely chopped spinach, thawed 1 block cream cheese
  • 1 cup medium salsa
  • 1/2 cup monterey jack or mozzarella cheese, shredded
  • 1/2 cup green onion, finely chopped 1/2 cup bacon bits
  • 1 TBSP cumin

Method

Thaw and thoroughly drain spinach, set aside. Melt cream cheese on low heat until easily stirred. 1 at a time, add salsa, bacon, onions and cumin; stir until well blended. Add spinach and cheese and stir until cheese is melted. Top with fresh cheese and serve warm with corn chips.

 

Notes: Flavor of salsa and amount of cumen can be adjusted to individual tastes. Cayenne pepper can be substituted for cumen. Bacon must not be imitation.
