Spiced Cranberry and Pear Soup

This refreshing fruit soup can be served hot or cold, and for dessert or as a special appetizer on a hot day.
 

Ingredients

  • 1 cup chopped cranberries
  • 2 cups cranberry juice
  • 3 ripe Bartlett pears, peeled and chopped
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoons freshly grated nutmeg
  • 2 thin slices fresh ginger
  • Creme fraiche or plain yogurt, optional
 
Method

Simmer cranberries in cranberry juice for 10 minutes. Drain cranberries reserving juice. Place cranberries, pears, spices, and ginger in a food processor. Process until smooth. Slowly add reserved juice with motor running. Mix until soup is well blended. Serve soup warm or cold, adding a swirl of creme fraiche or yogurt if desired.
